Hey everyone! So sorry for not posting another recipe sooner! This is also a cheating recipe (as I am using a box of cake mix and cool whip). But hey... if it's good, why wouldn't you make it, RIGHT!?!? So here is the super simple recipe for LEMON COOL WHIP COOKIES!!! Believe me they are wonderful! They are so light and fluffy!!!
What more could a girl ask for? Haha! Well the recipe I am writing is for lemon cookies BUT my sister and I wanted to mix things up so we use an orange cake mix instead. You can substitute any kind of cake mix you want! Which is great and super simple... just the way I like it! :) Well here it goes... don't blame me if you eat like a dozen of these little scrumptious temptations... just ask my friends ! ;) The lemon are amazing, the orange was pretty good too! I can't wait to try strawberry and Red Velvet! Yum red velvet is one of my all time favorites! So so so good! :) I'm thinking of making a cream cheese frosting of some sort to put in between the red velvet cookies.... yes, crazy I know : P My sister found this recipe online somewhere. I feel horrible that I can't credit the one that she got this from but if they ever see this, I greatly appreciate this recipe! So simple and delicious.... did I mention delicious? No? I didn't think so. ;)
WHAT YOU WILL NEED:
1 (8 oz.) container frozen cool whip, THAWED
2 eggs
1 (18.25 oz.) package lemon cake mix (or any flavor of your choosing!)
1/3 cup confectioners sugar for decorating
DIRECTIONS:
1) Preheat oven to 350 degrees F. Lightly grease baking sheets.
2) Beat together the thawed whipped topping and eggs together. Add the lemon cake mix (or whichever one you choose) and continue to mix. Dough will be sticky. Refrigerate for 30 minutes. Drop by teaspoonfuls into a bowl of confectioners sugar and roll to coat. Place cookies on the prepared baking sheets. Bake for 11 minutes. Cool on racks. ENJOY!!! :)
Aren't they pretty? Yum! I hope you guys enjoy them as much as me! I know my family and church family do!! These are especially good while they are still warm.... don't get me wrong, I love them cold too, but there is just something about a fresh warm cookie from the oven that just warms the soul! :) These make at least 3 dozen and they are always gone.... I'm telling you, this recipe is a keeper. And so simple you could have your children/niece/nephew/grandchildren help you!! Really!
